The Perfect Stir Fry for a Low-Carb, Low-Fat Diet

Another one for the books. This week’s LowFatLowCarb.com recipe feature is one of our favorite stir fries! With lean chicken breast and flavorful enoki mushrooms, we think this recipe will be a real hit in your kitchen.

We know it won’t really surprise you when we say that not only is this low-carb, low-fat recipe delicious, but it’s full of nutrients and things your body will love, like enoki mushrooms!

Enoki Mushrooms AKA Enokitake Mushrooms

Chances are you’ve seen these peculiar-looking mushrooms in the grocery store, but you may never have had the courage to pick them up. You’re not alone.

Once you try them, we can almost guarantee you won’t make another low-fat stir fry without them!

Native to Japan, Korea, and China, it’s not surprising that they’re commonly found in Asian-inspired dishes such as soups and stir-fries (like this one).

They’re perfect for absorbing any flavor you’re cooking with due to their mild flavor and sponge-like texture. Not only will they taste great in almost any low-fat stir fry recipe, but they’re health benefits can’t be ignored.


Did you know enoki mushrooms:

  • Have immune-boosting agents such as antioxidants, thiamin, potassium, calcium, iron, copper, selenium, and more?
  • Help you lose body fat in your gut as they are a great source of conjugated linoleic acid?
  • Normalize bowel movements and prevent constipation due to their higher concentration of dietary fiber?
  • Promote intellectual development with their high amount of memory-enhancing amino acid?

Not Your Average Cabbage

Also known as “Chinese cabbage,” Napa cabbage packs a powerful nutritional punch. People assume lighter-coloured vegetables don’t hold any nutritional value, but that simply isn’t true.
Napa cabbage has lots to offer, including:

  • Vitamin C, K, and B6
  • Calcium
  • Iron
  • Magnesium

And so much more!

The one thing Napa cabbage doesn’t contain are carbs, so you can add it to all your stir fries guilt free!

 

 

Don’t Forget the Protein!

As with any low-fat, low-carb diet, it’s important to make sure you keep your muscles strong with a daily dose of lean protein. We’ve made this recipe with 8 oz of chicken breast, but you can substitute it for turkey breast or even tofu, if you want to keep it vegetarian.
