    I’ve tried slicing carrots and they fly everywhere! I’ve tried dicing tomato and it turns to much under the knife… Am I missing some crucial skill or something?!

    Any help would be appreciated!

    Get a japanese knife. problem solved.

    I find that a sharp knife helps.  Tomatoes are sometimes easier to cut when the knife is serrated.
