In general, you can substitute coconut milk with a dairy alternative. Although we don’t generally recommend dairy, we understand that it’s a staple for some families. Our preferred dairy substitute would be the Greek yogurt.
1 cup Greek yogurt
1 cup evaporated milk
½ cup low-fat cream + ½ cup skimmed milk
1 cup heavy cream/full cream milk
If you have a good blender, you could try:
1 cup unsalted cashews + 1 cup of water (soak your cashews overnight making sure they are completely covered in water. Rinse and add to a blender with equal parts water. Blend until smooth. Add more water to desired consistency)
