Eating low-carb meals doesn’t
have to be a struggle!
If you’ve only recently decided
to cut the carbs from your diet, you may feel a sense of loss. The idea of a
delicious low-carb meal seems like such a far-off thing without all that bread,
pasta, potato, and more, but that’s just because you’ve yet to explore far
enough into the realm of truly tasty low-carb substitutes and solutions. But
once you try some of these alternatives to everyday carb-boosters, you’ll never
want to go back to the way things used to be.
When steamed and blended with
non-fat butter and cream substitutes, cauliflower can be mashed to a
potato-like consistency. You can purée it in a food processor, but if you like
your mashed potatoes on the chunky side and fancy an upper arm workout, you can
use a potato masher until the cauliflower is the ideal consistency. Season to
perfection, and not only will you drastically reduce the carbs, but you’ll soon
forget it’s not the real deal.
Pro Tip: Cauliflower also makes a great substitute for rice.
Mushrooms make perfect
substitutions for a lot of things—some vegetarians and vegans like to swap out
the beef patty for a Portobello mushroom cap on their burgers, but for some
truly delicious low-carb meals, we suggest you do the opposite. By swapping the
bun for these delicious mushrooms, you get all the potassium they offer and
none of the carbs (for bonus low-fat points, make your patties with extra-lean
beef or turkey). You can also brush a mushroom cap in olive oil, and then bake

It turns out that there are
actually a lot of great substitutes for pasta—one of them even gets its name
from being perfect for exactly that! The spaghetti squash is nutrient-rich and
can be boiled, steamed, or baked, and topped with your favorite
sauces. Both eggplant and zucchini can easily be
cut into thin slices and used for lasagna, and zucchini makes a delicious low-carb spaghetti substitute that can be sauced and
