We’ve gathered five of our favorite low-carb recipes that are perfect for hard-working mothers who deserve to be pampered this Mother’s Day.

Italian Baked Eggs

This recipe takes eggs and layers on the cheese, garlic, tomatoes, and basil. The finished meal is rich, savory, and filling. In short? A breakfast, lunch, or dinner that is sure to keep you going.

Italian Baked Eggs

INGREDIENTS

2 tbsp olive oil, extra-virgin
14.5 oz canned crushed tomatoes
2 garlic cloves, thinly sliced
1/2 tsp chili flakes
1 tbsp onion powder
4 eggs
1/4 cup parmesan, grated
sea salt & pepper, to taste
fresh basil leaves, shredded

DIRECTIONS

STEP #1
Heat oil in a large skillet over medium heat. Once the oil is hot, sauté the garlic and chili flakes until fragrant. (About 1 minute)

STEP #2
Add the crushed tomatoes and onion powder and bring the skillet to a simmer. Cook for about 10 minutes.

STEP #3
Turn off the heat and divide the sauce into your separate dishes. If you want you can always make one big dish and cook the eggs in the same skillet you used for the sauce.

STEP #4
Crack the eggs one by one into the dish. Top with your grated cheese and season with salt and pepper.

STEP #5
Bake in an oven at 400°F for around 12 to 15 minutes, or until it is set as desired.

STEP #6
Remove the pan from the oven and let it sit for 3 minutes. Garnish with fresh basil.

STEP #7
Ready to serve!

Hidden Veggie Meatballs

We all know moms love to hide veggies in their dishes. What if it’s not just for the kids? Either way, this hidden veggie meatball recipe is sure to please.

Hidden Veggie Meatballs

INGREDIENTS

1 pound ground sirloin
1/2 tbsp sea salt
1/2 tsp pepper
2 tsp onion powder
1 zucchini, shredded
1/2 cup cauliflower, shredded
1 egg

DIRECTIONS

STEP #1
Preheat the oven to 375ºF. Season the beef with salt, pepper, garlic powder, and onion powder in a large bowl.

STEP #2
Use a box grater to shred the zucchini and cauliflower.

STEP #3
Mix the zucchini, cauliflower, and egg in a bowl with the beef.

STEP #4
Form the mixture into 1-inch round meatballs.

STEP #5
Place the meatballs on a baking pan and bake for 20 to 30 minutes in the oven. To make sure they're cooked through, cut one in half.

STEP #6
Plate and serve with sugar-free ketchup.

Ready to serve!

Eggplant Pizza Bites

INGREDIENTS

1 eggplant, cut into ¼ inch slices
3 garlic cloves, minced
1 tbsp sea salt
1 tbsp olive oil
1 tsp Italian seasoning 1 cup, Janeva's marinara sauce
1/2 cup mozzarella cheese, shredded
green onions, to taste

DIRECTIONS

STEP #1
Sprinkle the eggplant with the coarse salt, and let sit on paper towels for 10 to 15 minutes, then wipe dry.

STEP #2
Preheat oven to 400°F. In a small bowl, combine the garlic, olive oil, and Italian seasoning, Brush the mixture onto both sides of the eggplant slices and bake for 15 minutes.

STEP #3
Remove eggplant from oven and flip eggplant slices. Top each slice with a tablespoon of marinara sauce, and a sprinkle of cheese.

STEP #4
Return to oven and bake for another 10 minutes, or until cheese is fully melted.

STEP #5
Top it with green onions to taste.

STEP #6
Ready to serve!

Caprese Zucchini Noodle Salad

This recipe is fresh and sumptuous. It’s the perfect side dish for an elegant Mother’s Day dinner or lunch on the patio.

Caprese Zucchini Noodle Salad

INGREDIENTS

4 cups zucchini, noodles
2 oz cherry tomatoes, sliced in half
4 oz mozzarella cheese, pearls
1 oz fresh basil, chopped

DRESSING

2 tbsp olive oil, extra virgin
1 tbsp apple cider vinegar
1 tsp garlic, minced
1/4 tsp sea salt

DIRECTIONS

STEP #1
Add all ingredients to a bowl.

STEP #2
Whisk dressing ingredients in another bowl and toss together.

STEP #3
Enjoy immediately or refrigerate until ready to serve.

Beef Ramen Bowl

What better for a woman that has warmed your heart since the day you were born than a nice heart-warming beef ramen bowl?

Beef Ramen Bowl

INGREDIENTS

4 cups beef broth, non-fat, low sodium
1 tbsp soy sauce, low sodium
1 tbsp apple cider vinegar
1 garlic clove, minced
1/4 tsp ginger, minced

FILLING

1 tsp grape seed oil,
2 zucchinis, (spiralized)
1/4 cup green onion,
1 cup bean sprout,
1 egg, (bring water to boil, add egg, and cook for 6 minutes)
1/2 lb beef,
sriracha, to taste (optional)

DIRECTIONS

STEP #1
Mix all the broth ingredients together in a pot and bring it to a boil.

STEP #2
While the broth boils, sear the thinly sliced beef in a hot pan with grape seed oil.

STEP #3
Add the zucchini noodles, bean sprouts, and scallions to the broth. Cook for about 2 minutes.

STEP #4
Add beef and half of the egg to each bowl and serve it up!

STEP #5
We recommend a dash of Sriracha for some heat and extra yummy flavor!

STEP #6
Ready to serve!
